MUDGIRL Recipe: Banana Protein Pancakes

Nothing better than a pancake recipe to start the day! 🥞🍌

Accompanied by shredded coconut or peanut butter, this recipe is even great for getting your strength up before a workout or a MUDGIRLRUN!


Here's our secret to simple, healthy pancakes:

  • 2 ripe bananas (tips: once you've bought your bananas, don't put them in the fridge, let them ripen, they'll be as sweet as they can be and it'll be easier to mash them once they're ripe)

  • 2 eggs

  • 80gr flour

  • 1 scoop (30gr) of protein, vanilla preferably (optional)

  • Baking powder (a quarter of a small packet)

  • Coconut oil (or a little butter to put in the bottom of the pan)

  • Chia seeds, for good omega 3 and fiber (optional)

  • Chocolate chips (optional) Topping (optional):

  • Shredded coconut

  • Oleaginous butter (peanuts, almonds, cashews, ...)

  • Maple syrup

  • Melted chocolate

  • Red fruits


Use your imagination ! 🙂


Put your pan on low heat.

In a bowl: mash your two ripe bananas then add the two eggs, mix until it is "fluffy". Add the vanilla protein scoop.

Then add your flour and baking powder.

Finally add your chia seeds and chocolate chips (this step is optional, without it the pancakes will still be great 😋)

Mix it all together until you have a mixture that is not too doughy or too liquid.

Add coconut oil (or your butter) to the bottom of the pan.


Then put a small ladleful of batter; once your pancakes look cooked enough on one side, flip them over.


Feel free to add coconut oil to the bottom of the pan (or butter) when the pancakes stick to the pan.


Place your pancakes on a plate as you go and add the topings you like!
