Fresh & original salad 🥗

The sun shines bright , it's hot and all you want to eat is something light, here is a little original fresh salad that will quench your thirst!


Ingredients (for a large salad bowl):

1 package of quinoa (200/300 gr)

1 package of spinach shoots

Basil

1 melon

200 gr of cashew nuts (or other nuts)

3 tomatoes

2 avocados

2 cucumbers

4 apricots

Cook your quinoa according to the instructions on the package.


In the meantime: cut the ingredients roughly or more finely (depending on your taste).


You can also make a small vinaigrette (one tablespoon of mustard, 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, salt and pepper, you can also add a little basil)


Mix everything in a bowl, put in the fridge for an hour and enjoy! 🌞


This is a simple and original dish, ideal for family meals during the summer!
